Pasta trenette with tomatoes

Pasta Trenette with fresh tomatoes is a classic Italian dish and a guaranteed favorite for both children and adults. It is a super delicious and simple dish, and is ready in 30 minutes.

Ingredients

500g Pasta Trenette

20+ small yellow and red tomatoes, halved

¼ cup Organic extra virgin olive oil

A few drops Lemon olive oil
-
Fresh parsley, thyme and basil

Italian sea salt

Fresh pepper

Fresh grated Parmesan
Directions
Preheat the oven to 300 degrees.
Cut the fresh tomatoes into halves and coat them in extra virgin olive oil.
Place the tomatoes on a baking sheet and season with salt and pepper. Cook them for 20-30 minutes in the oven, until lightly caramelized.
Finely chop parsley, thyme and basil and put to the side.
Cook the pasta in salted boiling water until al dente.
Remove the pasta from the water and place directly into a serving dish with the tomatoes and herbs, using some of the starchy pasta water to help bind the pasta to the tomato, olive oil and herbs.
Plate your pasta and drizzle a generous amount of lemon oil over top.
Finish with grated parmesan to give the dish an extra delicious touch.
