Parmesan crackers

Parmesan can be used in many different ways. These delicious, super elegant Parmesan crackers are one of our favorite ways to use our leftover cheese. Use them as a starter with a good glass of wine. This recipe yields about 24 pcs. Buon appetito!
 
                      Ingredients

- Turn on your oven to the highest heat setting. 
- Cover a baking sheet with baking paper. 
- Grate the cheese on the coarse side of the grater and mix the cheese with the flour, pepper, and optionally, the pizza spice. 
- Place heaping teaspoons of the cheese mixture across the baking sheet. Make sure to leave a good distance between each scoop as the cheese spreads out during baking. 
- Depending on how hot your oven gets, bake the cheese biscuits for 2 to 6 minutes. Set the clock and keep an eye on them. They should be golden brown and crispy when ready. 
- When they are ready, carefully pull the baking paper along with the crackers onto a rack or kitchen countertop to let cool. 
- Remove from the paper with a spatula. Serve as they are or with seasonal toppings. Small slices of raw ripe pear or plums are delicious on top. Balsamic vinegar is also a lovely pairing to the salty cheese.
