Parmesan can be used in many different ways. These delicious, super elegant Parmesan crackers are one of our favorite ways to use our leftover cheese. Use them as a starter with a good glass of wine. This recipe yields about 24 pcs. Buon appetito!

Turn on your oven to the highest heat setting.
Cover a baking sheet with baking paper.
Grate the cheese on the coarse side of the grater and mix the cheese with the flour, pepper, and optionally, the pizza spice.
Place heaping teaspoons of the cheese mixture across the baking sheet. Make sure to leave a good distance between each scoop as the cheese spreads out during baking.
Depending on how hot your oven gets, bake the cheese biscuits for 2 to 6 minutes. Set the clock and keep an eye on them. They should be golden brown and crispy when ready.
When they are ready, carefully pull the baking paper along with the crackers onto a rack or kitchen countertop to let cool.
Remove from the paper with a spatula. Serve as they are or with seasonal toppings. Small slices of raw ripe pear or plums are delicious on top. Balsamic vinegar is also a lovely pairing to the salty cheese.
