Homemade granola with extra virgin olive oil

Mama’s recipe for homemade granola is not sugar sweet but still full of flavor. The base ingredients are toasted in the oven in Made by Mama extra virgin olive oil with a little bit of honey and mixed with nuts. This granola is healthier due to the quality virgin olive oil and the low sugar content.
Ingredients

4 cups coarse rolled oatmeal

1 ¼ cups mixed coarsely chopped nuts

¾ cups coconut flakes

¾ cups sunflower seeds

2 teaspoons cinnamon

2 tablespoons vanilla extract

100ml honey
-
50ml water
-
100 ml Organic extra virgin olive oil

A few cracks Italian sea salt
Directions
Turn the oven to 320 degrees.
Line two baking sheets with parchment paper.
Warm oil, honey, and water in a saucepan along with the spices.
Mix the rest of the ingredients well in a bowl and pour the lukewarm oil over.
Spread the mixture on two baking sheets. Bake in the oven for approximately 20 minutes, until crisp and golden brown. Keep a close eye as no two ovens bake the same and the granola can quickly turn brown and burn.
Remove from oven and allow the granola to cool completely before placing it in a tightly sealed container.
Recipe Note
Extra Toppings: You can easily top up your basic granola with all kinds of dried fruits and berries and extra "spices" such as cardamom. Light raisins, bee pollen, cacao nibs, and a sprinkle of licorice powder are a favorite Danish flavor mix.
