Olive Oil Granola

While store-bought granolas are packed with unnecessary sugars, this homemade recipe is not overly sweet, and is a fantastic way to start your day or squeeze in a healthy snack. It is the perfect topping for yogurt, smoothies, oatmeal, or can be eaten on its own. And it has all the tremendous health benefits of extra virgin olive oil!
Ingredients

½ cup Organic extra virgin olive oil

½ cup honey

¼ cup water

½ tsp sea salt
- 2 tsp cinnamon
- 2 tbsp vanilla extract
- 1 tsp vanilla powder - optional

4 ½ cups rolled oats
- 1 cup mixed coarsely chopped nuts

¾ cup coconut flakes

¾ cup sunflower seeds
Directions
Preheat the oven to 320 degrees. Line 2 baking sheets with parchment paper.
Warm the oil, honey, water and spices in a saucepan. Mix the rest of the ingredients well in a bowl and pour the warmed oil over.
Spread the mixture on the baking sheets.
Bake in the oven for approximately 20 minutes, until crisp and golden brown, keeping a close eye to avoid burning.
Allow the granola to cool completely before placing it in a tightly sealed container.
EXTRA TOPPINGS: You can top up your basic granola with all kinds of dried fruits, berries, and extra spices, such as cardamom. Light raisins, bee pollen, cacao nibs, and a sprinkle of licorice powder are a favorite Danish flavor mix.
