Bruschetta with lemon oil

Toast or grill your day-old bread to turn it into a delightful appetizer or lunch dish. The key to making this simple recipe taste and feel luxurious? A phenomenal extra virgin olive oil (and even better - one infused with real lemon!
Ingredients
- 4 slices day-old bread
- 1 stalk celery, diced
- 1/2 red onion, diced
- A good handful of lettuce leaves or cabbage shoots, finely chopped

1 container ricotta cheese or 2 mozzarella balls
- Additional vegetables of your choice (we love to add tomatoes!)
- Herbs – e.g. basil, oregano or watercress

Organic lemon olive oil

White Balsamic Vinegar

Fresh pepper

Italian Sea Salt
Directions
Toast the bread slices on an oven rack or grill pan. The bread should be grilled until those crunchy grill stripes appear - this adds a great taste element. Allow the bread to cool.
Chop and slice your chosen vegetables for topping. Dress the veggies, lettuces and herbs with lemon oil, white balsamic vinegar, salt and pepper to taste.
Drizzle the crispy breads generously with lemon oil. Spread the ricotta cheese or place slices of mozzarella on the bread. The cheese can be omitted, but makes the breads even tastier. Add your vegetable mixture on top.
Serve the toasts on one large beautiful serving dish, or plate individually for your guests. Enjoy!
