Cucumber roll with prawns and tomato sauce

A lovely Spring snack or appetizer. Fresh, light, and the absolute simplest to prepare.
Ingredients

1 cucumber
-
¾ cup sour cream or Greek yogurt

2 teaspoons Pasta Spice Mix
-
Cooked small shrimps, chilled
-
Dill sprigs
-
Pomodoro sauce
-
Organic extra virgin olive oil
Directions
Combine the sour cream or Greek yogurt with the Pasta spice. This will be the “dressing” in this recipe.
Cut / peel the cucumber into thin strips with a potato peeler. Discard the seeds in the center. Pat the strips dry.
Spread a little dressing on each strip. Then, please 1-2 shrimps on top and roll the cucumber up.
Spread the chilled tomato sauce in the bottom of a flat bowl, or in smaller serving plates and place the cucumber rolls on top.
Garnish with dill sprigs and drizzle a little good olive oil over. Serve with a fresh piece of bread to soak up the delicious tomato sauce.
