Grilled Salmon Skewers

This citrusy, herby salmon is a wonderful entrée for an outdoor barbecue, and super easy to prepare in advance. We recommend serving it with a crunchy salad with fennel or fresh leafy greens.
Ingredients

Salmon (3-5oz per person)

½ cup Lemon Olive Oil

1 tablespoon Pasta Spice Mix

2-3 drops White Balsamic Vinegar

1 drop acacia honey

A few cracks Italian Sea Salt

Thin lemon slices (enough to cover all the salmon)

A few lemon wedges, for garnish/ decoration when plating

Directions
Combine lemon olive oil, white balsamic vinegar, pasta spice mix, acacia honey. Stir until well combined. You can prepare this a day in advance, if possible.
Remove the skin from the salmon and cut into cubes.
Coat the salmon in the marinade and allow it to soak for a few hours in the refrigerator.
Soak the wooden sticks in cold water a few hours before preparing the skewers.
Remove the salmon from the refrigerator, and slide the pieces onto the skewers, alternating between one piece of salmon and one lemon slice.
Pour any leftover marinade on the salmon before placing them on the grill. Cook to your desired temperature. We recommend about 1-2 minutes on each side, leaving a little pink in the center.
Serve the grilled salmon skewers on a beautiful plate, garnished with fresh lemon and a few cracks of sea salt on top.
