Watermelon Salad

This summer salad is juicy, vibrant and refreshing. It makes the perfect addition to any summer barbecue or dinner party with its simple, healthy and absolutely delicious ingredients and colorful presentation.
Ingredients

1 ripe watermelon, preferably seedless and cold

1 cucumber, cold

Mozzarella or feta
-
1 bunch mint leaves
-
½ cup pine nuts, toasted until golden in a pan

Organic lemon olive oil
-
Organic peperoncino olive oil
-
White Balsamic Vinegar
-
Italian Sea Salt
-
Fresh pepper

Optional: Sumac, Aleppo paprika or piment d’Espelette
Directions
Slice the watermelon into small bite-sized cubes.
Halve the cucumber lengthwise and remove the seeds with a teaspoon. Then cut the cucumber into small wedges.
Remove the mint leaves from their stems and roughly chop them. Save some whole leaves for decoration.
Combine the watermelon, cucumber and chopped mint. Season with salt and pepper and mix with your hands.
Break the mozzarella or feta into small, bite sized pieces with your fingers. Add to the salad.
Drizzle either lemon oil or peperoncino oil, and white balsamic vinegar over the salad.
Garnish with toasted pine nuts and whole mint leaves.
Optional: sprinkle one of the optional spices over top.
