Ingredients
-
4 hard-boiled eggs
-
1 jar Truffle Mayonnaise
-
1 jar Black Truffle Cream
-
Truffle Salt
-
1 lemon
-
1 teaspoon turmeric (optional)
-
Fresh green herbs for garnish
Directions
Boil the eggs in advance so they are ready to be prepared just before serving.
Place 4 tablespoons of truffle mayonnaise in a bowl. Season with truffle salt, pepper, and finely grated lemon zest. Optionally, add 1 teaspoon of turmeric for color enhancement.
Using a sharp knife, halve the eggs. Carefully remove the yolks from the whites and roughly chop the yolks on a cutting board.
Add the chopped yolks to the truffle mayonnaise mixture and gently fold to combine.
Slice a small portion off the curved side of each egg white to create a stable base. Add these small pieces of egg white to the yolk mixture and stir gently.
Fill the cavities of the egg whites with a spoonful of the yolk mixture. Top each filled egg with a dollop of black truffle cream.
Garnish the dish with greens and serve alongside toasted bread or rye bread and a simple green salad if desired.
