Strawberry and Tomato Gazpacho

Here is our spunky take on a classic Gazpacho, brought to life with the sweetness of strawberry and the acidity of Made by Mama White Balsamic Vinegar. 500g ripe stawberries

1 cucumber, peeled, halved and seeds removed

2 jars Pomodoro sauce

½-1 cup Organic extra virgin olive oil

Croutons
Directions
Soup
Put the strawberries (stems removed), garlic, onion, cucumber, bell pepper, Pomodoro sauce and olive oil together in a blender. Blend until smooth into a fine purée/ soup.
Season the soup to taste with salt, pepper, and white balsamic vinegar. Chill the soup until it is time to serve.
Strawberry Salsa
Remove the stems from the strawberries. Cut the berries into small cubes.
Drizzle with good olive oil and white balsamic vinegar. Season with salt and pepper. Set aside until ready to eat, preferably in the fridge.
Croutons.
Slice or tear the bread into crouton-sized pieces.
Toss the bread with olive oil and arrange on a baking tray.
Sprinkle pasta seasoning over the bread. Salt lightly.
Toast the bread until crispy in the oven at 350 degrees. Watch the bread very carefully to ensure it does not burn - it only takes a minute or two to go from golden to burnt!
Topping
Top the soup with small strips of “raw” prosciutto or toast the prosciutto in the oven for a few minutes to make it crispy.
Arrange the cold soup into bowls. Top with a small spoonful of strawberry salsa, croutons and prosciutto.
Drizzle Made by Mama olive oil over top to enhance all the flavors contained in the soup.
Decorate with edible flowers and herbs of your choice.
