Simple Lemon Garlic Pasta

When you come home after a long day, this pasta dish is good to have in your toolkit. It is quickly prepared, and is a meal on its own, but can also be eaten with meat or a salad. And of course, it tastes absolutely wonderful!
Ingredients

400g Pasta Fidanzati

2 tablespoons Organic extra virgin olive oil

3 cloves garlic, finely chopped

1-2 handfuls spinach

1 cup whipping cream
-
The juice from a lemon
-
Fresh pepper
-
Italian Sea Salt

Freshly grated Parmigiano Reggiano

Organic lemon olive oil
Directions
Cook the pasta in boiling salted water until al dente.
Sauté garlic in olive oil for a few minutes.
Add the spinach and let it collapse a bit before adding the cream and the juice from ½ a lemon. Let it simmer for 5 min before combining with the cooked pasta.
Season with extra lemon juice, salt and pepper. Serve in a deep dish with plenty of parmesan and drizzle some lemon oil on top.
