Caesar sandwich

We are obsessed with this caesar salad sandwich, made with pan-fried chicken, and of course topped with our truffle mayo and plenty of parmesan. The perfect easy lunch!
Ingredients

1-2 slices chicken tenderloin

2 tablespoons sesame seeds

2 tablespoons wheat flour

1 egg

Salt and pepper

Organic extra virgin olive oil

1 teaspoon butter

1 bread roll / pita per person
-
1 jar Truffle mayonnaise

2 leaves romaine lettuce

Parmigiano Reggiano

Grill skewers (optional)
Directions
Combine wheat flour and sesame seeds on a piece of baking paper. Grind salt and pepper into the flour mixture.
Dip the chicken pieces in beaten egg and then coat them in the flour mixture.
Fry the meat until golden in extra virgin olive oil and butter on a pan, until cooked through, approx. 3 - 4 minutes on each side.
Heat the rolls in the oven, or toast until crispy on both sides, and cut ¾ through. Carefully open the bun without it splitting in two. Let cool.
When the bun has cooled down a little, spread both inside sides with truffle mayonnaise. Place two leaves of romaine lettuce in the bun and 1 – 2 pieces of chicken. Pierce with a skewer to hold it all together. Grate plenty of Parmesan cheese over the top.
