Shrimp Rolls

This shrimp roll is the perfect addition to any picnic or evening dining al fresco.
Ingredients

4 brioche hot dog buns

1 tablespoon capers, lightly chopped

4 gherkin pickles, finely chopped

½ white spring onion, finely chopped

⅔ to ¾ cup cooked shrimp

4-8 romaine leaves
-
2 red chilis, in thin slices

16 small tomatoes, halved
-
2 green spring onion, finely chopped

A sprinkle cayenne pepper

2 tablespoons Truffle mayonnaise

2 tablespoons Greek yogurt 10%
-
1 pinch sugar
-
1 pinch Italian Sea Salt

A dash cayenne pepper

½ lemon juice
-
A drizzle truffle oil

Directions
Combine the sauce ingredients and stir until they reach a creamy consistency. Taste and season additionally as needed.
Combine the filling with the sauce, but wait to add the shrimp until right before assembling the rolls.
Warm the brioche hot dog buns in the oven or toaster.
Arrange the romaine leaves at the base of the bun, and top them with the shrimp salad.
Garnish and serve immediately.
Recipe Note
Do not fill the buns with the shrimp mixture until serving to avoid letting the buns get soggy.
