Potato salad with pasta seasoning

It isn't summer without potato salad. This one is light, bright, and bursting with flavor.
Ingredients

½ cup Organic extra virgin olive oil

1 tablespoon Pasta Spice Mix

1 pound small to medium-sized new potatoes

1 spring onion, in thin strips
-
½ pound freshly podded raw peas

Italian sea salt

Fresh pepper
Directions
Combine the olive oil and pasta seasoning and season with a little salt and pepper. If possible, do this several hours ahead of time so the oil and herbs can have time to meld together.
Pour boiling water over the potatoes and let them boil for 8-10 minutes. When they are ready they should be easily punctured with a fork but still firm.
Peel the potatoes and combine the warm potatoes with the spicy marinade. Now let the potato salad sit and cool for an hour.
Just before serving, add the spring onion and peas into the potato salad. Toss and serve!
Recipe Note
If you are looking for a creamier potato salad, you can combine the Spice mix with buttermilk, sour cream or yogurt.
