Are you ready to treat yourself to a taste of Italy? Our rich and creamy Italian pistachio spread is not just for spreading—it's your secret ingredient for creating the most delightful pistachio ice cream right at home!
Ingredients
-
1 jar Pistachio Spread
-
2 cups whipping cream
-
1 lime, zest only (optional)
-
2 tablespoons green unsalted pistachios, chopped
-
2 sprigs fresh mint
-
1 pinch sea salt
Directions
Leave the jar of pistachio cream on the kitchen counter until it reaches room temperature.
Take the whipping cream out of the fridge 30 minutes before starting, so the temperature difference between the cream and the pistachio cream isn't too great.
Place the pistachio cream in a deep bowl and whisk until smooth and creamy, preferably using a mixer.
Gradually add the cream and a pinch of salt, whisking gently until the mixture begins to resemble whipped cream. Be careful not to overwhip, as the mousse can become too stiff and gritty.
Once the mousse reaches the desired texture, stir in some lime zest.
Pour the creamy mousse into a freezer safe storage container.
Decorate the top of the container if you like, adding whole pistachios, lime zest, and/or a pinch of sea salt.
Put the container into the freezer until the next day. Remove it from the freezer 10 minutes before serving to allow the ice cream a moment to soften.
When serving, grate lime zest over the top and garnish with chopped pistachios, fresh mint, and a crack of sea salt to accentuate and balance the sweet flavors.
