Ingredients
- 1 medium aubergine, sliced (max. 1 cm thick)

1 large dollop of Extra virgin olive oil

1 jar of Pomodoro sauce

1 tsp Pizza seasoning

Salt (to taste, from a grinder)

Pepper (to taste, from a grinder)

2 cups grated Parmigiano Reggiano
- 1 large ball of fresh mozzarella
- ½ cup breadcrumbs (preferably Panko)

Directions
Preheat your oven to 400°F.
Cut the aubergine into wedges (max 1 cm thick).
In a skillet, heat a generous amount of extra virgin olive oil over medium heat. Fry the aubergine slices until they are slightly golden, then transfer them to a plate lined with paper towels to absorb any excess oil.
We love to use a muffin tin for individual servings. Begin by adding a layer of tomato sauce to the bottom of each cup. Follow with a sprinkle of pizza seasoning, a layer of grated Parmesan cheese, a slice of aubergine, and a slice of fresh mozzarella.
Repeat the layering process until all ingredients are used, ensuring that each layer follows the same order.
Finish with a slice of mozzarella on top, then generously sprinkle with grated Parmesan cheese and breadcrumbs.
Place the dish in the preheated oven and bake for approximately 15 minutes, or until the top is golden brown. If using a larger dish, it may take up to 30 minutes.
Melanzana alla Parmigiana can be served piping hot, but it is equally delightful when enjoyed lukewarm or even cold.
