Here, we have Mama’s idea of a dream burger with an Italian twist. Our burger is carefully composed to give you a new and delicate taste experience, from the creamy balsamic onion compote to the truffle mayo. And to hold it altogether, our deliciously airy homemade Khorasan KAMUT® flour burger bun.
Ingredients

Made by Mama Specialties Box (contains all the key ingredients in this recipe!)

1 bag Organic KAMUT Khorasan pizza flour

200ml water from a container of fresh mozzarella

150ml warm water (if you do not have water from the mozzarella, use 350ml regular warm water)

1 teaspoon salt

1 teaspoon sugar

¼ teaspoon cardamom (optional)

100g melted butter

1 tablespoon Pizza Spice Mix

1-2 tablespoons Sesame Seeds

Organic Extra Virgin Olive Oil

1 tablespoon butter
-
6 large onions
-
300ml water
-
100g sugar

¼ cup Dark Balsamic Vinegar

Salt & pepper to taste

Good quality burger meat, fried in a pan or on the grill

Directions
Burger Buns
*In order to allow sufficient time for the dough to rise, begin making the buns well in advance.
Combine all the ingredients for the buns in a mixing bowl and knead by hand or with a mixer for a minimum of 10 minutes.
Spread a little olive oil on the bottom of a large bowl, put the dough in, and cover with a damp tea towel. Allow the dough to rise in a warm place for a minimum of 1.5 hours.
Once the dough has risen, sprinkle the kitchen table with a little flour and carefully pour the leavened dough onto the table. Cut the dough into suitable pieces, depending on whether you want to make large, medium or small buns. Ensure all the pieces are the same size so they will cook evenly. (In a single package of Made by Mama flour, there will be 4 very large, 8 medium or 12 small buns).
Preheat the oven to 350 degrees.
Shape each piece of dough into a round bun and spread the buns on a baking sheet lined with parchment paper. Cover with a damp tea towel and place the buns in a warm place to rise. They should double in size, which will take approximately 30 minutes to 1 hour. Patience pays off here.
When the dough has doubled, you are ready to bake! Baking times are flexible, as no two ovens are the same:
• 4 large buns, approx. 20 minutes
• 8 medium buns, approx. 15 min
• 12 small buns, approx. 10 minutes
Cool the baked buns on a rack.
Spiced Butter
While the dough is rising, melt the butter in a small saucepan. Do not let it go brown. Put the pizza seasoning in the butter and let it bubble up. Turn off the flame and let the spices soak in.
Brush the beautifully raised buns with the melted spice butter using a soft baking brush. Sprinkle sesame seeds on top and place the baking tray in the oven. Save the rest of the butter for later.
Onion Compote
*We always keep a jar of onion compote in the fridge, because it tastes great with so many things: a variety of meat dishes, sandwiches, or hot dogs. You can make the compote several days in advance, or while the dough is rising.
Cut the half onions into long slivers. Sauté in oil and butter until translucent, ensuring that they do not brown.
Add water, sugar and Made by Mama Dark Balsamic Vinegar (not all balsamic vinegars are made equal!). Let the compote simmer for approx. 15 minutes, or until creamy. Season with salt and pepper as desired. You might also add a little extra splash of Balsamic or water to adjust the flavor and consistency. This compote can be stored in a tight-fitting glass in the refrigerator for 1-2 weeks.
The Finale!
Cook your burger meat as desired on a grill or fry pan.
While you cook the meat, prep your buns. Halve the buns and brush their surface with the remaining spiced butter, then toast on a pan or grill until golden.
Lather the two halves with truffle mayonnaise and then stack your delicious toppings: lettuce, meat, tomato sauce, mozzarella and onion compote. If it needs extra support, hold the burger together with a wooden skewer.
