Mediterranean Grilled Chicken and Vegetable Skewers

This is a classic grilled chicken and vegetable recipe, with instant flavor provided by our pre-mixed Mediterranean herbs. Serve with Tzatziki or an easy mixed green salad with Made by Mama’s Vinaigrette.
Ingredients
- 2 chicken breasts
- 1 large red pepper
- 2 firm zucchini or squash (or 1 of each!)

1 tablespoon Pasta Spice Mix
- 1 drop acacia honey

Directions
Mix the marinade by stirring all the ingredients together as far in advance as you can - preferably the day before serving your skewers.
Clean the chicken breast and cut the meat into 12 roughly equal pieces. Put the meat in a ZipLoc bag, pour in the marinade, and let it marinate in the fridge for a few hours.
Rinse and clean the vegetables.
Trim the ends of the zucchini and cut into 12 slices approx. ½ inch thick.
Cut the pepper into 12 equal cubes.
Put the meat and vegetables onto 4 skewers. Start and finish with a piece of pepper as it holds together vegetables and meat on the skewer. Put the skewers in a dish and dab any remaining marinade over them.
Grill skewers on both sides. It takes 5–10 minutes on each side, depending on how big the pieces of meat are and how hot the grill is. Cut a small slit in one of the pieces of meat and check that the meat is cooked through. Poultry should never be served raw.
Arrange the grilled skewers on a nice dish and drizzle with a little rosemary oil on top. Garnish with fresh herbs.
