A classic vinaigrette is the world’s best and easiest salad dressing. It can transform a salad from boring, to a gastronomic experience, especially when you use good extra virgin olive oil from Made by Mama. The white balsamic vinegar for the dressing makes it both sour and sweet in the most delicious way. To add extra flavor, use a teaspoon of Pasta spices from Made by Mama for a little garlic and chili zest.
Ingredients

2 teaspoons Dijon Mustard

½ teaspoon Italian sea salt (a few cracks)

½ teaspoon Fresh pepper (a few cracks)

6 tablespoons Organic extra virgin olive oil

2 tablespoons White Balsamic Vinegar (or Rosé vinegar for a slightly sweeter taste)

1 teaspoon Pasta spice mix (optional)
Directions
Put mustard, salt, and pepper in a bowl and stir thoroughly.
Add the olive oil, little by little, while stirring vigorously.
Pour in the balsamic vinegar and stir until smooth. If the dressing separates a little, is too "harsh", or too thick, add a few drops of ice-cold water.
Stir until smooth, taste, and adjust as desired.
Optional: Add Pasta spices and let the dressing soak for a few hours.
Recipe Note
Optional additions: Add a drizzle of honey, a little finely grated garlic, or fresh herbs to lift the vinaigrette to a new level. You can also try adding one of Made by Mama’s other spice blends - they work perfectly in a vinaigrette. If you love parmesan cheese, add it to your dressing for salads topped with meats or fish. Be careful with adding salt in combination with Parmigiano - parmesan cheese carries salt.
