Hot Dogs with Onion Compote

Onion compote is a lovely thing to have ready-made, stored in a mason jar in the fridge. The compote tastes great in a hot dog, but also on a sandwich, smørrebrød, or as a side to a steak or cutlet.
Ingredients

4-6 hot dogs/ sausages

4-6 buns of your choice

6 large onions
-
2 tablespoons butter

1¼ cups dark beer

½ cup sugar
-
¼ cup Dark Balsamic Vinegar

Optional: 1 bay leaf

Italian Sea Salt
-
Fresh pepper
-
Organic extra virgin olive oil

Optional: mustard
-
Optional: thyme, chives or parsley

Optional: pickled or raw cucumbers
Directions
Onion Compote
Peel and halve the onions. Cut the half onions into thin strips.
Fry the onions in olive oil and butter. Be mindful that they do not brown - they should be transparent.
Add beer, sugar, bay leaf and dark balsamic vinegar to the softened onions.
Allow the onions to simmer in the sauce for approximately 15 minutes or until it has softened to a creamy compote consistency.
Season with salt and pepper as desired. Adjust the taste with additional balsamic vinegar, if needed.
Prepare the hot dogs or store in an airtight container for up to 1 week.
Hot Dog Preparation
Cook your sausages or hot dogs. Toast the buns. Smear the sausage with mustard.
Top with onion compote and optionally, a few slices of pickled or raw cucumber. Garnish with herbs of your choice.
