3 zucchini

Organic Extra Virgin Olive Oil

White Balsamic Vinegar

Basil Olive Oil (or lemon!)

Parmesan (sub: ricotta, feta or mozzarella)

Lemon, thyme, herbs of your choice!
Directions
Rinse and dry the zucchini. Cut them into thin slices, lengthwise, with a super sharp kitchen knife.
Brush the slices with a little olive oil and grill the slices on both sides on the outdoor grill or on a grill pan in the kitchen.
Drizzle a little olive oil onto the serving dish and place the grilled slices on top. Sprinkle with salt and drizzle with olive oil and touch of white balsamic vinegar between the layers. Top with your preferred cheese, and some fresh herbs.
Recipe Note
Leave the stem ends of the zucchini on, and cut them with the slices (as pictured). It looks beautiful and the stem can easily be eaten this way.
