Dukkah Spiced Nut Mix

Dukkah is an exciting, flavor-filled mixture using roasted nuts and spices. It can be used as a delicious snack served with bread and olive oil or as a rub for meats and vegetables. Here is Made by Mama's take on a Dukkah using our Pesto spices.
Ingredients

½ cup almonds

½ cup hazelnuts

¼ cup pine nuts

¼ cup pistachios

2 tablespoons sesame seeds

2 tablespoons Pesto Spice Mix

Organic extra virgin olive oil (optional)
Directions
Roast the nuts in a hot pan. First, place the large nuts on the pan and watch as they shrink with toasting.
When the larger nuts look smaller and golden, add the sesame seeds. The sesame seeds only need to be roasted for a short time. Shake the pan frequently to ensure the nuts do not burn.
Distribute the hot nuts, in one layer, on a paper towel sheet and let them cool completely.
Mix Made by Mama pesto spice with the nut mixture. Season to taste with salt and more spice.
Put the Dukkah mixture in a tight-fitting storage jar.
If you like a slightly finer Dukkah, you can pulse it in a food processor with the Pesto spice. This finer version of dukkah works great as a breading for fish or chicken.
If you want to serve the Dukkah as a dip, combine it with Made by Mama’s olive oil for a wonderfully nutty, spicy accompaniment to bread.
