Citrus salad with extra virgin olive oil

Winter is the season for citrus fruits and we need lots of vitamin C during these cold months. So it’s the perfect opportunity to make a salad with seasonal citrus fruits. Fresh, healthy and delicious!
Citrus juice and olive oil are a match made in heaven. You can use all kinds of citrus fruits in this salad: oranges, mandarins, clementines, grapefruits or pomelos – just look in your fruit bowl and see what you have available. Serve the salad as a snack plate, as breakfast or as an accompaniment to fish and chicken. It’s also delicious with smoked meat or pork chops.

1 large red grapefruit

2 large oranges

2 ripe limes

1 ripe avocado

Organic extra virgin olive oil

3-4 drops White Balsamic Vinegar

Arugula (optional)

A pinch Italian Sea Salt

Fresh pepper (optional)
Directions
Cut a slice off the top and bottom of the citrus fruits. Use the flat edge to stabilize the fruit, and cut off the rind with a sharp kitchen knife, gently and as close to the flesh as possible. It is important that all the white skin is removed, as it is very bitter. Cut the fruits into slices and arrange them on a nice platter, or on individual serving plates.
Cut the flesh of an avocado into cubes and distribute evenly on top of the fruits.
Drizzle with olive oil, balsamic vinegar, a small pinch of salt, and (optional) fresh pepper from a grinder.
To make the salad more filling, you might also add some arugula, top it with mozzarella, feta, or chopped nuts.
