Spaghetti with Pumpkin Cream

We embrace pasta all year round, but we love to always keep seasonal ingredients in mind. As such we've developed this absolutely dreamy creamy pumpkin pasta recipe that will blow you away. Try it coated onto spaghetti or Trenette and serve with lemon oil, parmesan cheese and crusty bread. It doesn't get any better than this warming dish on a cool Autumn day.
Ingredients

200g Spaghetti

2 tablespoons Italian Sea Salt

400g pumpkin, with peel on

2 cloves garlic

2 bay leaves
-
Water or vegetable broth

A small dollop of butter (optional)

½ cup whipping cream (can be replaced with vegan cream)

½ cup cooking water from the pumpkin

1 lemon, ½ juice and rind

1 handful grated Parmigiano Reggiano

Fresh pepper

Lemon olive oil

Homemade croutons or crunchy toasted bread

Directions
Bring a large pot of water to a boil and add plenty of salt. Cook the pasta according to the instructions on the bag.
Don't peel the pumpkin; the peel adds flavor, color, and vitamins. Remove the seeds from the center of the pumpkin and cut the flesh into smaller cubes.
In a pan, combine the diced pumpkin, whole garlic cloves, and bay leaves.
Add enough water or vegetable broth to just cover the ingredients.
Cook the pumpkins until they are completely tender, which takes approximately 15 minutes.
Strain off the cooking water, but save it for later. Remove and discard the bay leaves.
Transfer the warm, tender pumpkin flesh to a blender. Process the pumpkin into a creamy sauce by adding butter, cream, grated Parmigiano Reggiano cheese, and some of the reserved boiling water.
Season the sauce with a little lemon juice and lots of grated lemon peel.
Add more grated Parmesan cheese and freshly ground pepper to taste. Taste and adjust with more lemon juice or extra salt if needed.
Drain the cooked pasta and immediately combine it with the pumpkin cream.
Arrange the pasta and cream in deep serving plates. Drizzle a little lemon oil over the pasta. Serve immediately, topped with the crispy bread and grated Parmesan cheese.
