Porchetta, a savory roll roast bursting with aromatic spices and herbs, is a culinary delight in Tuscany. Ingredients
- 4.4 lbs large pork loin with skin on
- Cotton twine for tying the roast

Organic extra virgin olive oil

4 tablespoons Pizza Spice Mix
- 6 cloves garlic, finely chopped
- 4 onions, finely chopped
- Peel of 2 lemons, finely chopped

1 tablespoon Italian sea salt

1 tablespoon Fresh pepper
Herbal Mixture
Directions
Stir together all the ingredients for the herb mixture.
Place the meat on the table, skin side down. Trim excess fat and score the rind lightly with a knife.
Flip the meat, season with salt, pepper, and herbs. Roll tightly and tie with cotton twine.
Have the twine ready for tying; it's easier with two people!
Refrigerate until ready to roast.
Drizzle olive oil in a roasting pan, place the roll in, and sprinkle with salt.
Roast at 450°F for 30 minutes, then reduce to 375°F and roast for another 2 hours.
Rest for 25 minutes before slicing.
