Pasta with mushrooms and truffle oil

This pasta recipe feels special and luxurious while being incredibly simple to prepare. Add fresh truffles to take it to the next level, or get plenty of decadent truffle flavor from our best-selling truffle olive oil.
Ingredients

500g mixed mushrooms

500g Pasta Pappardelle

Organic Extra Virgin Olive Oil

Truffle olive oil

1 finely chopped red onion
-
1-2 cloves garlic
-
Italian Sea Salt

Fresh pepper

Thyme leaves

Fresh truffles (optional)
Directions
Sauté red onion and garlic in a pan with olive oil until they are translucent and soft.
Remove onions and garlic from the pan and put the heat on high. Put the mushrooms in the pan while stirring. Just before they are at the perfect consistency, turn down the heat and add back the onions as well as lemon, salt and pepper.
Meanwhile, boil the pasta as directed by the package.
Stir the pasta and mushroom mixture and coat it in the truffle oil.
Just before serving, sprinkle with fresh thyme and optionally fresh shaved truffles.
