Parmesan Biscuits with Pizza Spice

These are an indescribably delicious and crumbly, crispy cheese crackers. Serve them with a glass of wine, a cocktail, a hot soup or lightly crushed over a salad. Bake a large batch and store in an airtight container so you are always ready and prepared!
These are also a great way to use up the leftover bits of cheese before they expire!
Ingredients
- 100 grams wheat flour
- 100 grams cold butter, cut into small cubes
- 100 grams grated Parmigiano Reggiano
- 2 teaspoons Pizza spice mix
- Freshly ground pepper, approx. 5 cracks
Directions
Put the wheat flour in a bowl with the cold cubed butter. Crumble the butter into the flour with your fingers without pressing too hard, until the mass resembles small breadcrumbs.
Add the grated Parmesan cheese, the pizza seasoning, and crack some fresh pepper into the mixture. Mix gently with your hands.
Roll the dough into 2 rolls, approx. 2 inches in diameter. Wrap them in cling film and let them rest in the fridge for min. ½ -1 hour. If the dough feels too dry to roll, you can add a bit of water.
Heat the oven to 300 degrees with the fan on.
Cut the rolls into thin slices with a super sharp kitchen knife and place them on baking trays lined with baking paper.
Bake the biscuits until lightly golden in the middle of the oven for approx. 20 – 25 minutes. Set the clock for 10 minutes at a time and check the color of the biscuits. Be careful not to let the crisps get too dark because the cheese will become bitter.
Cool the biscuits on a wire rack and place in a sealed container for storage. Or, enjoy them right away!
