Grilled corn with truffle mayonnaise

Delicious corn on the cob grilled with chili oil, and served with truffle mayonnaise and freshly grated parmesan. Corn on the cob is always a popular item on the summer grill menu - and for good reason! It is a very easy dish and the sweet corn kernels taste incredible when they're in season. These corn on the cobs are, to us, the taste of Danish summer.
Ingredients

4 pieces of corn on the cob

Organic peperoncino olive oil

Truffle mayonnaise

Parmigiano Reggiano

A sprinkle of sumac

Italian Sea Salt
Directions
Carefully pull back the corn husks and tie them together with a piece of kitchen string. Remove the hairs and brush the corn with chili oil and sprinkle with salt.
Grill the corn for approx. 10 min – depending upon how hot your grill is when you begin. Continue to rotate them as you go, so that the flasks get delicious grill marks on all sides.
Place the corn on a platter and spread a nice layer of truffle mayonnaise on top. Top with grated parmesan and a bit of Sumak spice. Now they are ready to serve!

WHAT IS SUMAC?
Sumac is a versatile spice that adds a fruity, sour and citrusy note to your cooking. It is especially popular in the countries around the Mediterranean and in Middle Eastern cuisine, where this spice is included in marinades, rubs and dips - or sprinkled directly on the food before serving. Sumac is one of the few spices that has a distinctly sour taste and is therefore used in Middle Eastern cuisine in the same way as one would use vinegar, lemon or tamarind elsewhere in the world.
