Easiest Pesto Pasta

Kids coming home from school starving with dinner not ready until 7 pm? A quick fix: pasta with pesto. Teach them the recipe—it's easy. Traditionally made with basil, but you can use other greens like parsley or kale, even carrot tops taste great! Just olive oil and lots of parmesan, and you're set.
"Fidanzati" pasta, meaning "the lovers," is perfect for pesto. Great for lunchboxes too, with veggie sticks on the side.
No need for precise measurements—practice making pesto by eye. I often use sunflower seeds instead of pricey pine nuts, straight from the packet, no need to toast. Creamy texture guaranteed.
Ingredients

Pasta Fidanzati
- 1 large handful of basil leaves and thin stems

½ cup Organic extra virgin olive oil
- ½ cup sunflower seeds
- ½ to 1 cup finely grated parmesan cheese

White Balsamic Vinegar

Freshly ground pepper

Maybe a little extra salt, careful—parmesan is salty.
- Possibly a splash of ice-cold water if the pesto seems too thick.
Directions
Blend everything until creamy. Taste and mix with freshly cooked pasta.
Top with extra virgin olive oil and plenty of freshly grated parmesan.
Optional: Try replacing basil with parsley, green or kale, or even carrot tops. It tastes great and adds a nice twist to the pesto.
