Classic Tomato Bruschetta

Extra virgin olive oil and pasta spices – you hardly need anything else to make this delicious little snack. This classic Italian appetizer is ideal for a summer party with friends. Simple to make, fresh and packed with flavor.
Ingredients

½ cup Organic extra virgin olive oil

1 tablespoon Pasta Spice Mix

1-2 drops Balsamic Vinegar from Modena

Italian Sea Salt

Fresh pepper
- 2 large ripe but firm tomatoes
- 6 slices toasted or grilled fresh bread
- Basil leaves (for garnish)
Directions
Combine extra virgin olive oil, balsamic vinegar and pasta spices. Season with salt and pepper. (If possible, do this step a few hours before serving so that the spices have time to infuse into the oil and vinegar)
Cut the tomatoes into small cubes and toss them in the dressing.
Grill/ toast the bread, add the dressed tomatoes over top and garnish with basil.
