How to Cut & Store Parmigiano Reggiano

Cutting your Parmigiano Reggiano

We recommend using the proper knife designed for Parmigiano Reggiano, which is the pointed spade knife. This knife is perfect for breaking the aged Parmigiano into gorgeous, uneven pieces that honor the natural movement and dimension of the cheese. Simply insert the knife straight down into the cheese, and put pressure to break off one chunk at a time.

For short periods of time, Parmigiano Reggiano can be kept at room temperature in stores without suffering any damage. Once purchased, it is advisable to store it in the refrigerator to keep all its aromatic characteristics and ensure an optimal preservation of the product.

Once you have opened your cheese...

Once the package has been opened, Parmigiano Reggiano with a maturation of 24 months or more can be kept for about 1 month. Our cheese is aged for 27 months, because this is where the balance between fatness and acidity is absolutely perfect, so you should be able to keep it for about a month during which time it should maintain its optimal properties. 

The official Italian authorities on Parmigiano Reggiano recommend storing your cheese in the refrigerator at a temperature ranging from 4 to 8°C (approx 40-45°F). They also say that if any mold appears on your cheese, you can remove it using a knife.

Because Parmigiano Reggiano tends to absorb other smells present in the refrigerator, we recommend storing it in plastic or glass containers once opened. You can also store it in a food-grade plastic film.
